2 Recipe: Black Bean Salsa

Alright, so I found this recipe off of dailydishrecipies.com, however, after making it the other day for a pot luck at work, I realized I wanted to change a few things to my liking.

This is an extremely quick recipe to make, and makes for a delicious dip for any occasion (especially with thanksgiving, christmas, and the super bowl around the corner)

Ingredients makes enough dip to serve about 15 people, so tweak it if you're planning on having more/less.

2 Cans of whole Kernel Corn (7oz)
3 Cans of Pearls Sliced California Olives (2.25 oz)
2 Cans of Black Beans (15.5 oz)
2 Cans of Crushed Tomatoes (15.5 oz)
2 Red Bell Peppers
Fresh Cilantro (for time purposes you can use Cilantro Paste, which I did)
8oz tub of Sour Cream
3 Tablespoons of Mayo
Cayenne Pepper
Garlic Salt
Hot Sauce
Tostito type chips
Large Bowl

1. To start, open all of the cans, drain them, and pour them into a bowl together. 
2. Finely chop the red peppers, put them in the bowl. 
3. Finely chop the cilantro, put it in the bowl (or squeeze the entire tube of paste in the bowl)
4. Mix Throughly together

In a separate bowl
5. Pour the whole tub of sour cream in
6. Put the three tablespoons of mayo in
7. Sprinkle the Cayenne pepper in (no amount listed, because this is all on you, put as much as in as you want)
8. Sprinkle the Garlic Salt in (AGAIN, no amount listed, so use what you feel is necessary)
9. Mix all of these together throughly

10. Take the creamy mixture you just made, add it to the previous mixture
11. Mix throughly 
12. Depending on how hot you like things, add as much hot sauce as you want (I like spicy things, and I LOVE hot sauce, so I add A LOT of it)

Open that bag of chips, and dig in.

  1. I despise mayo. Do you think ranch dressign would be a good substitute? I have a chipotle ranch salad dressing that I love.

    1. I also, do not like Mayo at all. However you really barely taste it. Though, I don't see why Chipotle Ranch would not be a good substitute. My suggestion, take a little bit of the bean portion of the dip, mix it in with a small batch of the chipotle ranch and see how it tastes. Either way, let me know, because I'm always down for tweaking recipes :)
